Anyway to enable advanced data protection WITHOUT having to remove my watch from my account?

Any device that will not take OS9, iOS16, iPadOS16 or certain latest MacOS updates will not be allowed to exist on your account if you want to activate ADP.
So unfortunately no, leave it as it has been for years (still very secure) til you upgrade.
