I was just scammed by someone impersonating Apple. When I looked at the true/full email address, it was obviously not from Apple. Can I display the actual address instead of the “name” to avoid this. I know I can click the little down arrow to see it, and I do that when I have any suspicion of the email, but this one was good and I fell for it.

Mail > Settings > Viewing > Use Smart Addresses
With this setting off you will see the name and email address next to it.

It was off. I turned it on then back off. Restarted Mail and now it is displaying the name and address.

Looks like it's not available on iOS devices, but that's not as important.
