Turn ipad into a kiosk

Hello,

I am looking for input on how to turn an ipad into a sot of kiosk in the field. My employees would need to be able to access it, preferably under one name, and punch in, do our equipment inspections on an app, etc. How do I lock it down and make it so that that is all that they can do? I want to give access to the internet as needed and facetime too to troubleshoot things but I don't them to be able to chance any settings.
