My email accounts will go offline after awhile, and need to force quit the mail app or restart to get it quit. it also using lots of cpu and boost the cpu temp high. try many ways and cannot get it fix.

You can simply try a SafeBoot How to use safe mode on your Mac - Apple Support will sort many anomalies.
For problem accounts deleting the accounts and adding them back in.
