I have changed my Apple ID and want to link the UNiDAYS of the same student email to the new Apple ID. However, when I entered the UNiDAYS email, it showed it was already in use. So, I cannot link it to my new Apple ID.

I tried this on my new phone (log in your new Apple ID already) with my UNiDAYS. ⬇️
-> log in UNiDAYS with the same school email address
-> search for “Apple Music” and you’ll see Apple Music student plan
-> click “get now”
-> a new window will pop up and will link your new Apple ID and your UNiDAYS automatically
-> pay for student plan
-> DONE ✅

I had the same reminder as well, but that was before I searched for “Apple Music” in UNiDAYS. Maybe you could try to search it? After I got my plan in UNiDAYS, the problem does not exist anymore. Hope this could help.
But it will say "Account already used" and reminds me that the account I provided is already being used for an apple music student subscription... I'm sure the previous subcription has already expired...
Unlink UNiDAYS from old Apple ID and link it to the new one
