when I'm on always on display on my ultra instead of dimming my watch face the black screen with digital watch on the upper right corner of the screen appears, this suddenly happened, before my watch face was dimming normally instead of this black screen, how can I fix this?

Force restart your watch i.e. press and hold both the side button and Digital Crown for at least 10 seconds, then release both buttons when you see the Apple logo.
Then while the Watch is restarting Force Restart the paired iphone Force restart iPhone – Apple Support (UK)
After that ensure Always On is turned on as described in the article...
