MacOS changes "Date Created" when I open an existing, already created folder.

For work purposes we are still on Mojave. We do a lot of photo stuff, and scans go into folders created automatically from our scanner. When that happens, the date created is correct. If we then open that folder the following day (or any other day), MacOS is changing the Date Created to the day we open the folder.

I've been on the Mac for a very long time, but only recently began working so intimately with folder info. This behavior is really screwing with our workflow, and I cannot find a setting that would cause this or allow me to turn it off. Help?
