For some reason all of my archive sub folders are no longer visible in outlook on my iPad. The folders all exist, as I am able to see all of them when I want to move a new email into one. But none of the sub folders are visible for access in the drop-down list.

If the issue is just with the Outlook application (you can view these folders when checking your mail directly on the Outlook site), you can try removing and reinstalling the application on your device.
Delete apps on your iPhone, iPad, and iPod touch
If you're still unable to view the folders, you'll want to contact Microsoft for assistance.
