I have a 2023 MacBook Pro 16" which came with a large brick charger that is 140 watts. Can I use one of my old magsafe 85 watt chargers to power this device as well? I assume that it would be safe, just not charge as fast.

You assume correctly—"I assume that it would be safe, just not charge as fast."
Safe is not the ONLY issue. The MagSafe-3 input connector on the most recent models does not accept older MagSafe adapters.
It does not fit.
