How do I downgrade my software from the Ventura back down to the previous one

There is no downgrade mechanism. Wipe and re-install Monterey or whatever, and restore a pre-upgrade backup or migrate from a pre-upgrade backup. Once upgraded, a whole lot of the files can be modified in ways that are not compatible with older versions, which means restoring from an older backup.
