Can I receive my iPhone calls on my Apple Watch and also having a different esim number on my Apple Watch? Meaning to say I can receive calls through my esim(different number from my iphone) and my calls that are going to my iphone?

As it turns out, your iPhone and Apple Watch share the same number. The Apple Support article that you started with provides more details about these features of your devices.
