That’s a wide-open question, and particularly given there is some utter rubbish third-party USB-C hardware available.
A standards-compliant charger and cable should work fine. Note: standards-compliant, and should.
The Apple device might not charge quickly, or might not charge at all; the charger will have to provide sufficient wattage. For instance:

Officially, and for best certainty, use what came with the device, or is documented by Apple as being compatible.
I’m not aware of any case where damage will result using an Apple charger and Apple cable with an Apple device, but am aware of cases where mixed charging can be or is problematic. (e.g. the Apple 29W USB-C charger.)
Short answer: Yes.
Any Apple USB power adaptor can be safely used on any Apple USB-powered device.
The device will only “draw” as much power from the adaptor as it can safely use.
