I started to set up my new ipad accidentally pressing "restore previous ipad" which was my partner's, now it's setting up under her ID. How can I change it?

By far the cleanest, easiest and most straightforward method to resolve this issue is to first allow the erroneous setup to complete - and then completely reset the iPad and start again. When the setup has finished, follow this process:

This process will completely wipe the iPad - and importantly, remove the Activation Lock that will be associated with your partner’s AppleID account. This is essential - as otherwise you will encounter all manner of issues.
