iphone 13 physical sim vs esim

On my iphone 13, I would like to disable the physical sim (regular carrier in the US) and use an esim in Europe. The instructions for installing the esim from Orange say to have roaming on. How can I have roaming on and not incur charges on the US account? From the videos I've watched on the subject, people say to "turn off" an account but I don't see this option under cellular on the iphone 13.

I travel a lot and use other country's SIM cards to avoid hefty international charges. Can I still do this with eSIM? When I travel I usually buy a SIM from a local carrier to avoid the big international fees Verizon charges. Will I still be able to temporarily transfer my phone to another carrier when I'm on vacation with eSIM or am I screwed with the iPhone 14?
