Getting all photos on MacBook Pro off to a USB drive

Hello - I'd appreciate it anyone could help with this! I have done some searching and can't seem to find the answer that applies to me. I am giving up my 2015 MacBook Pro, which is running Big Sur 11.7.6. All I want to keep from it are the photos. I have a few thousand .jpg and/or .jpeg files that I would like to copy off to a flash drive. I tried using Finder to copy and paste the entire "Photos Library", I found that to be almost worthless, because after copying that library onto my windows 11 machine, the pics were all jumbled up in any number of little folders. I just want to find and cleanly copy out the jpgs. That's all. I don't want to preserve iphoto, or "events", or any other part of Apple's idea about how the pics should be organized. Thank you for reading and passing on any ideas.

To get the photos onto an external drive as JPEGs, select the photos in Photos in the "All Photos" album and use the command "File > Export > export ...photos". In the Export dialog select the original size and high quality, also to include the locations and other metadata.

Additionally I would use "File > Export > Export unmodified originals" to save the high resolution originals in addition to the edited versions.
