mac apple mail will automatically delete my next mail message before I've read it when I delete the message before it that I've read. I am constantly having to go to edit (undo) to bring back the unread email. this is a brand new issue, hasn't happened before. I've tried restarting mail..nope

Safe Boot from the HD, (holding Shift key down at startup), does the problem occur in Safe Mode?
Safe mode attempts to repair Disks & clears lots of caches, so if Safe Mode works try again in regular boot.
If you have no POP accounts & they’re all IMAP accounts then in Mail’s Mailbox menu choose Rebuild.

Strange, one of the accounts is POP (the account that auto deletes) and the other is IMAP. Safe mode didn't work, just stalled on the Apple icon. How do I get both accounts the same ?? This deleting problem doesn't happen to junk mail or the IMAP account. thanks so much for all your help!!
Forgot to add, I guess I was in safe mode and restarted ...the same issue. I now have a folder on the desktop that is called activity_files?? full of text documents (10,099,160 bytes (10.3 MB on disk) for 70 items created yesterday) can I delete this folder? Sorry I'm so dense here
They all have the same time from yesterday, ranging from 982 bytes ..9kb ..this was one:

POP normally removes it from the server when downloading an eMail, so disable that account & set it up again as IMAP.
We'd need to see what the files are by double clicking one or maybe opening it with Text Edit.
Mail >Window>Connection Doctor, uncheck Log Connection Activity.
I deleted 90% of that because it exceeded 5000
