You don't "change" the passcode for the phone. Instead, you must reset or erase the phone and then set it up again using a new passcode. (Might be a good idea to write that down and keep it in a safe place).
If you have a current backup of the phone, you can use that to restore the phone, so it will look like it did before the passcode was forgotten.
