Deleting Music App from Apple Watch:

The Music app is part of the watchOS. You cannot delete it. See if this ASC Post works for you: How to turn off Now Playing on Apple Watch - Apple Community

The Music app cannot be removed from macOS, it is considered to be part of the operating system. I suspect you would find this tool useful: https://github.com/tombonez/noTunes. It can prevent Music from launching in response to system events that normally trigger it.
