How to show apps I list from on Home Screen

For watchOS 7 and above:

1. Open the Settings app  on your Apple Watch.
2. Tap App View, then tap Grid View or List View.

You can also open the Apple Watch app on your iPhone, tap My Watch, tap App View, then tap Grid View or List View.

And a 3rd option. When you have either the Grid or List view on your Apple Watch Screen, press hard on the screen and the option to change the view will pop up.
