I want to track several different items using separate AirTags. How can I connect a second AirTag and see it from my phone?

You can certainly set up and track multiple AirTags at once. Just follow the steps in this article to set them up: Set up your AirTag using your iPhone, iPad, or iPod touch - Apple Support. It even outlines how to rename each AirTag so that you can keep track of your items much easier!
