I learned from another discussion that the compatible charger for the watch ultra is a 35W USB-C charger. I have the double USB-port charger of 35W for my macbook air M2. Now I was wondering if I could use this charger, use one port only, and get fast charging of my Ultra.

You can use any charger which is at least 20w to fast charge your Ultra. Using a more powerful charger however, WON'T charge it any faster than one which is 20w. Charging speed is regulated by the watch.
