Hi, Apple Mail desktop used to give you an option not to save sent emails as I've set up my email hosting to a footer for all my emails I use for work. Why has this option toggle option disappeared? Also, I would like the option to globally disable the conversation view.

You will have to ask Apple "why questions" or submit your Product Feedback - Apple
If you do not see the Conversations option in you tool bar add it in make your change.
Mail>View>Customize Toolbar
