Apple Watch heart rate

Hi.

I have Apple Watch Series 3. Some days my heart rate on watch is fine sits at 60-80 then exercise to 140 and randomly then get spikes of 210 or down to 39…. How accurate are these as I didn’t even realise the 210 happened until I looked back!!
