I know iPhone uses end to end encryption but does my phone carrier ( Verizon) have the capability of seeing my text messages and internet activity?

Text messages, yes, because SMS is not encrypted. iMessages, and FaceTime, no because they are end-to-end encrypted. Likewise, most other messaging apps: Signal, Telegram, WhatsApp, Skype, Google Meet, etc.
Internet activity, sort of; they know your IP address and the IP address you are accessing, but not the content exchanged during that access. You can further limit what they know about your IP addresses using VPN, but then your VPN provider knows that information, and Verizon is probably more secure than many VPN providers.

Since Verizon is providing your data service, all cellular data traffic has to go through their routers.
You’re saying my phone carrier can read my text messages even though they are E2E encrypted?
That was more what I meant to ask. If it is iMessage to iMessage that is off limits to carriers. Not that I have anything to worry about but I do value privacy
