IMAC [RETINA 4K, 2019] mac OS Monterey 12.6.5
Email boxes open, show list of emails, allows me to delete from trash and junk folders. But I wait many minutes for email to come in readable.
What can I do?
I've already unloaded thousands of old emails.
*they come through fine and fast on my iPhone.

Do you have a mechanical (SATA) internal drive, or internal fusion drive? If you have one of those, that could be the reason for the slow performance. Those drives rely on mechanical (spinning) HDDs and those are very slow and inefficient with the APFS drive format, which is what you have if you are running Monterey.

Alternatively, you can replace the internal drive with an SSD. The computer will be more than 10x faster.

Download and run Etrecheck. Be sure to give it Full Disk access before running.
Copy and paste the results into your reply. Etrecheck is a diagnostic tool that was developed by one of the most respected users here in the ASC and recommended by Apple Support to provide a snapshot of the system and help identify the more obvious culprits that can adversely affect a Mac's performance.
Copy the report
and use the Additional Text button to paste the report in your reply.
Then we can evaluate the report to see if we can determine the cause of the problem.

It would likely cost about half that. However the only reason to replace your internal drive would be if it is the cause of the slowdown. You did not respond to my questions about what type of drive you have. Your internal drive might be fine if it meets your needs. Your original post complained about SLOWDOWN in CAPITAL letters so I inferred this was important to you. Even if the internal drive is causing the slowness, you do not HAVE to replace it if that costs too much.
Since nothing else seems slow, I am not sure what is causing your slow emails, although an internal HDD (versus SSD) would be a likely suspect.
I think the best next step is to follow Old Toad's instructions about Etrecheck.
When did this begin? After an update?
Have you installed and run any "cleaning", "optimizing", "speed-up", anti-virus or VPN apps on your Mac?
It began not long before this update, and didn't improve after the update and barely improved after I deleted most of my old emails.
At first, I thought it messed up other apps, but after AppleCare help and waiting a day, that all recovered.
I'm not noticing a problem with any other program - only emails on the desktop.
Except this - possibly unrelated - iTunes has had a problem for a long while now that didn't improve - and I know others using it having the same problem - where you shorten the end of a track and it doesn't always work within iTunes - spins or keeps playing the full end. However, playing on zoom it works fine. So I've found a workaround in holding dances.
I'm not very good at the technical lingo and knowledge, but had an external HD in the past that died and was lucky a techie could save my art and music and programs all from within the computer HD. So very anxious about doing some major change I don't really understand fully.
