A. Perform a Restart:

Try Force Restarting your iPhone. Save any information that need be. Then perform the Force Restart.

B. Are you using Focus Mode?

1. Go to: Settings
2. Tap: Focus
3. Tap: [focus name] Fitness
4. Tap: Dim Lock Screen so that it is off.

Please read the following Support Article to learn how to change the color of your time. The time is most likely set to the “color” that makes it a little transparent, and makes it blend a little with the background. In some photos, this is probably too transparent, as you have seen. Try changing color of the time to black:
