As mentioned elsewhere in the thread, the usual cause is beta profiles. Look for and remove that.

If this is not a beta profile, back up the iPhone, connect to a Mac or PC, factory reset it, and restore the backup.

PS: nice allusion in your nick, too. I laughed.

In Settings, open VPN & Device Management, remove the beta profile, restart the unit, and run Software Update again. If there isn't one, check that it can properly communicate with Apple's servers.

An iPhone 6 Plus would be stuck at 12.5.7, not 12.1.

iOS14:

You don't see it, because iOS14 is no longer an option for download. If you upgrade an iPhone, it only install the latest-compatible iOS version. An iPhone 7, for example, will skip iOS14 and only install to iOS15. You'll never install iOS14 on it, unless it the the iOS that is currently installed, and you perform a restore from a backup of the same iOS14 version.

Sounds like 6 Plus.

Post a screenshot of Settings, General, About.

Or is that Settings, General, Profiles on ios12?

Yes, it could, but the point is that being stuck at 12.1 doesn't suggest that it's an iPhone 6 Plus or incapable of 15, and the other provided information points to it being compatible. An iPhone 6 Plus wouldn't have 3D Touch.

I stand corrected. Got my old iPhone 6’s N/A-for-update frowned upon.

iPhone 6S will update to iOS15, I have one.

I don't see iOS14 mentioned.

I said I didn't see iOS14 mentioned by the OP in their question. You were the first to mention iOS14.

Why not mention iOS13 then?
