We are all experts, with varying levels of expertise.

I think that was a valid expectation. Just don't assume that the answer you get is the answer you wanted. 😄
As your research has already determined, this is an Apple process, uploading data to an Apple server. None of us know what it is uploading. If I had to guess, I would guess it is uploading analytics data, crash logs, and similar things. When it comes to the amount of analytics data and crash logs produced on an average Mac, I can assure you that 500 MB is a very small portion of that.
But regardless, that's just a guess. Apple provides very little explanation of what the operating system does at this level. In fact, what you are describing is several levels below Apple's already low interest in providing systems information.
What does it matter? Do you have doubts about Apple's commitment to privacy? Do you have any evidence that Apple is not, in fact, the company with the best track record of protecting user privacy? Even if we assume that Apple isn't as good as they claim, is there any evidence that they aren't still much better than other similar companies?
If Apple is the one you are worried about, then you need to get off the Internet right away and destroy all of your devices. Because if Apple is siphoning off your personal data via its embedded OS update service, then it's totally hopeless. All is lost.
Or, you could take the other extreme. Get a Facebook account, a gmail account, setup a camera and livestream your life. With any luck, you'll go viral, get on a podcast or two, and start making some money from your newfound celebrity and product endorsements. Maybe become a Mac security blogger and internet researcher.
