Panic Medic Boot.. A third party kernel extension was preventing the machine... Need an expert

Woke up to crashed computer last Monday and now not sure how to fix? Need expert help

Last Monday my daily driver (MacBook Pro Late 2019) fully maxed out ($3300 refurbished in Mar 2020) started having issues. Once booting up it would last maybe an hour then crash. I was able to pull most data off to externals, but still stuck. Took it to an ASP and they Revived it because was getting stuck on Internet Recovery not loading, but they were unable to restore it. I picked up the machine and it seems I am able to run Catalina, but whenever I go up above that there are issues with the updates. I have searched and search to no avail. The ASP recommended replacing the logic board which is $1k fix. Not exactly the route I want to take.. I use the machine for virtualization and one the copied VMs are of course unable to run on Apple's silicon so have been trying everything I can think of to update it to the latest OS, but keep running in to update issues. Have tried Big Sur, Monterrey, Ventura, etc..

I've wiped the computer completely and tried reinstalling numerous times, but the only OS that takes hold is Catalina.

Any help would be great. Leaving out of town tomorrow and need this working.

Thanks!!!

when I say completely ERASE the drive, I mean:

Select the drive by its immutable manufacturer-given device-name

and erase THAT.

If not showing, use the View menu to 'show all devices'

if you have a T2 based device (2108 or later) and that has not been successful, you will probably need to do a restore from another Mac running 10.15.6 or later.
