can i use my apple wallet with my passcode rather than Face ID or thumbprint ID? I don’t use either of those now, just use a passcode

If you delete all registered fingerprints from your device, or reset your FaceID appearance, your iPad will default to using just your Passcode.
TouchID
Settings > TouchID & Passcode > [Fingerprints]
Tap the registered fingerprint, then Delete Fingerprint; repeat to remove each registered Fingerprint
FaceID
Settings > FaceID & Passcode > Reset FaceID
After reset, exit settings without setting-up the new appearance
