Well, then don’t. Seriously. Deny that. The only thing here that’ll happen when you deny this access is your access to Google mail and such from your iPhone will break. this because you decided to deny access, or didn’t want to store the credentials.

Not to be pedantic, but Google certainly wants all that info. That’s the fundamental reason why Google runs free hosting. That grants access to your data, and your metadata; your contacts, activities, peers, etc. To the what is an immense online marketing entity.
But to your concern, for your iPhone to do what you have requested here—to access Google mail, calendars, or such—you are being asked to provide access credentials, where Apple will then store those either locally on your iPhone or in iCloud Keychain when enabled. Which is what Google is now telling you, and that display presumably from within a Google app.
