Restoring my Iphone 12

when i restored my iphone on itunes i wanted to earse eve rything. but it still was requesting my sign in info and password. why was my phone still asking for a password when i completly restored it?

how do i restore and completely erase my iphone 12 back to factory settings on itunes?
