I do not see my photo stream in my photo albums. I purchased a phone with lots of memory specifically to handle all my photos. Am I ok?

Yes. If you don't have a My Photo Stream album then you don't have MPS enabled. You can verify that by going to Settings ➙ Photos and checking this:

When you verify it's not enabled you can just ignore the emails and hoopla regarding My Photo Stream's demise next month.

You're OK. My Photo Stream is an older, seldom used method of transferring pictures from the iPhone to a Mac. Some people still have it, because they started with it years ago. Don't worry.
