I remember reading that the parental restrictions on an Apple ID automatically turn off when “the account” turns 18, I recently turned 18, and my age is correct in my Apple ID, but it still tells me that I need to ask for permission to download apps, is there anything I can do apart from changing it with the “family administrators” account?

As observed earlier, it has to be turned off by the Organizer. Apparently you don't just age out of it.

If you're getting a message about needing permission to download something, it sounds like you're most likely part of a family sharing group and the organizer of that group has the "Ask to buy" option enabled.
They would need to turn it off with these steps:
1. Open the Settings app.
2. Tap your name.
3. Tap Family Sharing.
4. Tap your family member's name, then tap Ask to Buy. In iOS 15 or earlier, tap Ask to Buy then tap your family member's name.
5. Turn on or off Require Purchase Approval.
