How to turn off annoying autocorrection and substitutions on mac Numbers?

Disabling:

everything in: Edit > Spelling and Grammar

AND

Edit > Substitutions > Text Replacement

isn't enough!! It still capitalizes my text! My variable names DON'T need auto-correction! It is very annoying because you can't even go back to, for example, de-capitalize, with arrows!

I don't think that should be necessary. You have settings for this within Numbers.

With the text in a cell selected (i.e. triple-click so the cursor is inside the cell and all the text is selected) try going to Edit > Transformations ...

Also, with just the cell selected (you don't have to select the text within it), you can try going to Format > Font > Capitalization ...

You didn't get the problem. If you select the cell or cell's text and go to format > font > cap. or edit > transformations you can manually edit the capitalization of that cell, but the problem is the AUTOMATIC capitalization! I can already remove it manually without going to the menu.. I don't want to do it every f. time!
