I cannot add my printer to Big Sur. I tried latest Epson driver, no luck, and there is no Airprinter option.

AirPrint works the last six macOS versions including Big Sur without drivers.
What exact model printer do you have? If it didn't have AirPrint originally it won't with driver upgrades.
The EU is more stringent on consumer rights and compatibility. Try the Epson websites in Europe for a driver that will work with Big Sur. You might find one that will work with a direct USB cable connection between the printer and your Mac.
Time for a new printer that is on that AirPrint list. If Epson no longer supports the anonymous printer on macOS Big Sur, and it is not supported by AirPrint, then either use it on a WIndows machine, or replace the printer with a newer device that is supported by Apple's AirPrint when networked.
