It sounds rather like your Water Lock button got deleted in Control Center. This should be easy to restore, please check the following Apple Support documents;

Use Control Center on your Apple Watch - Apple Support

Remove Control Center buttons

You can remove the buttons in Control Center by following these steps:

    1. Touch and hold the bottom of the screen, then swipe up to open Control Center.
    2. Scroll to the bottom of Control Center, then tap Edit.
    3. Tap  in the corner of the button you want to remove.
    4. Tap Done when you’re finished.

To restore a button you’ve removed, open Control Center, tap Edit, then tap  in the corner of the button you want to restore. Tap Done when you’re finished.

It disappeared with the new update, and now you can only find it under training if you choose to swim. Wich is really annoying since I used the Lock Screen when I have my iwatch in my pocket while working (where its not allowed to wear watches) and avoid the screen to be activated. So Im not happy with the new update.

The water drop 💧is still there, but they moved Control Center to the flat oval side button (see picture)

A quick press and release will bring up Control Center, and scroll to the water drop 💧 icon.

DO NOT hold the button, as that brings up Emergency services.

If you have timing issues with the quick press and release, then adjust this setting:

Settings -> Accessibility -> Side Button Click Speed

I like "Slow". My Wife likes "Slowest". This adjustment is also useful when bring up Apple Pay via a double press and release.
