Why is the restore method so archaic? Hasn’t Apple figured out a better way? ITunes is ancient and not really supported any longer, so this being the only way a user can restore an iPad seems very archaic. C’mon Apple, I would expect better than this.

There is always Apple iCloud.
If you own a Windows PC, then iTunes is the only option Apple has provided and this goes for old/er Macs, as well.
Newer Macs and macOS use the Finder app.
