Email encryption

I know Apple iCloud emails between the Apple server and my iPad are encrypted, but is that just the body of the email or does that include my email address and who sent the email? I’m wondering in the case of a mitm what they could see. Thank you.

Apple iCloud Mail uses SSL/TLS to secure the communication channel between the mail client (your iPad) and the host (Apple’s Mail Servers). As such, all mail messages exchanged between your iPad and Apple are fully protected from MITM interception.

For and MITM attack to be successful, the SSL/TLS certificate trust chain must itself be compromised - and this will be detected by both the mail client and host.
