I want to disable recording VO2 max on my Apple Watch. Even though I take a walk at least once a week and do exercise in the morning, it is at low and that causes stress for me. I really want to remove it but I don't know how. Is it stuck there or am I able to remove it?

I don't believe you can disable that function. However, nothing says you need to look at it.
There are no settings that I can find for that. The only place I can see it is in the Health app on my phone. If you're not getting a notification, then just don't look at it.
But I think there's a setting that tells you if your VO2 max is low that is switched on by default. I have not received the notification, but it's still on.
