I am setting up my mid-2012 MacBook Air for one of my kids and I don't seem to be able to change the incoming mail server from POP to IMAP (no matter what I do I just don't get the option). Is this because it is running macOS Sierra (V10.12.6) - newer OS are incompatible with this generation of Macs apparently? Any assistance appreciated as I'd like to make use of the laptop - it runs beautifully otherwise.

Are you able to set it up using "Other" category after removing the current account?
If there are POP eMails already on this setup copy the eMails over to On My Mac Boxes, then remove that Mail account rom Sys Prefs>Internet Accounts & setup using Other & fill in these things...
Who is the Mail Provider?
The receiving email ports are:
IMAP is port 143
IMAP-SSL is port 993
POP is port 110
POP-SSL is port 995
Outgoing ports are...
SMTP and SMTP-SSL is on ports 25, 587 and 465. Port 587 has to be SSL, and port 465 is enforced TLS-wrapped and is generally used by Outlook users.

I'm not technical so apologies if this response is a bit 'lay' but the problem is that when I set up a new mail account I am not given the option of choosing IMAP or POP for receiving email, it just automatically chooses POP and there isn't an option to change it (strange as we are an all-iOS household and I haven't had a problem on other devices)

this option doesn't appear - I just go straight from entering the password to a POP account being set up (and I don't get the option to change it)
Apologies for the delayed response, I've not been at my desk. I think I will take the laptop into the Apple store and see if they can assist. Will post an update if I resolve this. Thanks again for your help!
