When connecting your iPad to an external monitor or projector via HDMI, both video and audio are directed to HDMI. If you route your HDMI connection via an AV Amplifier’s HDMI connections - connecting both the iPad and Monitor/Projector to the AV Amp’s HDMI ports - the AV Amp can strip the audio for playback.

If instead you are seeking to use an analogue audio input of a basic Amplifier, you’ll have to use a proprietary HDMI splitter/switch to extract analogue audio from the digital HDMI connection. You’ll not be able to output analogue audio from the iPad while connected via HDMI; this is not supported by iOS/iPadOS.
