I have the series 3 Apple Watch I got a few years ago. I’m trying to pair it up with my iPhone twelve, it keeps saying it needs an update but it tells me I don’t have internet connection to get the update when my phone is working just fine. My sister was able to connect hers to her phone, is there something else I should do? I wanna avoid buying a new one if possible.

You need your iPhone's internet connection to be a regular WiFi like you might have at home or in the office. Not cellular, not hotspot from another device, not one of those horrible WiFi systems with a web page landing which you often find on a public WiFi (hotels, coffee shops, etc). The other point is the WiFi needs to have a reasonably good download speed or any updates are likely to time out.
One hint. If you are struggling and have an Apple Store anywhere near you, their WiFi is usually good for setup of Apple devices and I'm sure they won't mind you dropping in. If it still fails you have experts on hand.
