To what point do you go through to setup a new MacBook before you connect to your old one with migration assistant? Will it ask me to go through a total setup? Do I set it up as a new setup?

Actually you have nothing to do except to turn on the new Mac. You'll be guided thanks to the Setup Assistant which will offer you at some point to transfer your data from the previous Mac: Set up your MacBook Pro - Apple Support.
My recommendation would be to use an Ethernet cable between the two Mac to speed up the transfer as, through Wi-Fi it can be slow.

You can also connect the two Macs with a Thunderbolt 3 or 4 cable (https://www.macworld.com/article/1663578/migration-assistant-thunderbolt.html.) Make sure to get a Thunderbolt certified cable: a regular USB-C cable would not give you the same transfer speed.
Thanks for the response, but call me stupid, but there are only USB-c slots available, how does a person connect an Ethernet cable?
