I have got brand new unlcoked 14 pro max from Apple store and i do not have esim yet on the phone.
Under "About" section i see "ESIM" section with Carrier as IPhone 54.0 and with CSN details and another one with availble SIM. Why do i have one IMEI with Carier as "IPhone 54.0", is it something to do with SOS with Sateliite connection..? How many esims can be stored under one IMEI ..?

The carrier version number can vary depending on your mobile carrier and the updates they release for their services. It's possible that "Carrier 54.0" is a specific version released by your carrier to address bug fixes, network improvements, or other adjustments.

One IMEI one SIM
On iPhone 14 models, you can store more than 8 eSIMs. However, at any given time, you can only use two eSIMs because there are only 2 IMEI numbers on these iPhones. The other eSIMs will remain inactive until you deactivate one and activate another.

Yes it supports 8 eSIMs, but are those stored under ONE IMEI ..?
