Unless your phone was not protected with a passcode, it would be impossible for anyone to remove your Apple ID from your phone.......unless.....you were tricked or scammed into providing that information
If your iPhone, iPad, or iPod touch is lost or stolen - Apple Support
If you purchased AppleCare + with Theft and Loss Coverage, you would file a claim with Apple Support.
File a claim if you have AppleCare+ with Theft and Loss coverage - Apple Support
If you purchased insurance from another company, you would need to contact their claims department.

Troubleshooting a Lost Device:
Secure your Account:
Having been stollen, someone likely has your credentials. So, refer to the following...
A. Re-Associate All Devices:
Disassociate all devices from your Apple Account, first. Sign out of iCloud on all of your devices.. Go here to check the devices associated to your account: Check yourApple ID Device list to See where you're Signed in - Apple Support. Then, log in to your Apple iCloud Account on each device.
B. Verify Your Devices:
Verify that your the devices logged in to your account or officially yours, by using this link: Check your Apple ID Device List to See where you're Signed in - Apple Support
C. Consider Modifying your Credentials:
By all means, consider modifying your credentials, starting with a new password.
D. Change the Password and Passcode:
To remove findmy a user needs the passcode / Face ID / Touch ID to unlock the device and needs the iCloud password of the device user. It’s far more likely that the device is off or not powered.
