If these apps require a version higher than an iPhone 6 is capable of being updated to, then yes, the apps cannot be installed and will require you to purchase a newer iPhone which is capable of running a higher level iOS version.

Your iPhone is too old and its hardware is too limited.
iPhone 6s, iPhone 6s Plus, iPhone 7, and older, is supported through iOS 15 at most, and no further.

You did not tell us what model of iPhone that you have, but to update to iOS 16, you need at least an iPhone 8.
Settings > General > About > Model Name

Nope. Not supported.
iOS 15 is the end of the line for iPhone 6S and iPhone 6 Plus; to iOS 15.8.2, currently.
For iOS 16, you’ll need a newer (used, refurb) or new iPhone; an iPhone 8 or newer.
Any recent iPhone will be substantially more capable than this iPhone, as well.
