My iPhone 14 is reading all incoming messages from Messages, Instagram, Messenger and What's App out loud and I never set it to do this. I also don't know how to turn this feature off.

Does it happen only when AirPods/Headphones are connected?
Check the setting at Settings > Notifications > Announce Notifications. If you have that listed it Settings, it can be shut off there.

my iphone 15 pro max is reading some text messages out loud but not others,its connected to a cochlear nucleus 8 sound processor(cochlear implant) it would be great if it read every message but only certain ones
I tried Max Jim’s advice on my wife iPhone 14. He is correct, I was able to turn it off. I looked for this service on my iPhone 13 and it isn’t there. You know your stuff Max Jim!
