My emails show up with content that sometimes show up for me to read, not necessarily every time and I have trouble pulling it up again when revisiting the same email, very strange. I tried the suggestions in the comments before this submittal, nothing worked yet. Any suggestions please ?

If your email isn't downloading properly, here's some basic steps you can start with: If you can’t receive emails in Mail on Mac
If it's still not working properly, try removing and re-adding the email account in the Mail application.
1. In the Mail app on your Mac, choose Mail > Settings, then click Accounts.
2. Select an account, then click the Remove button.

In Mail, choose Mail > Add Account, select an account type, then enter your account information. Make sure the Mail checkbox is selected for the account.
