I’d like to switch my default browser to safari, but I don’t see the option to select it in settings. How can I change this? Currently using bing and want to switch. I see Google, yahoo, bin, duck duck go and whatever ecosia is.

There is a Bing app, and there is a Bing search engine. To change the latter read Search for websites using Safari on iPad - Apple Support.
If you installed the Bing app, you can just remove it, or select Settings > Bing > Default Browser App and choose Safari.
In any event Safari is not a Search Engine.
The selections you show above are for Search Engines. While the advice from John above will allow you set your browser, you will still need to select an appropriate search engine. Note, there is no Safari search engine.
